Tiramisu brownies
What you need
- OKB Brownie Mix
- ½ cup cooled brewed coffee (split into 2- ¼ th cup portions)
- Lady fingers
- ¼ cup brandy
- ¾ cups heavy cream
- 2T sugar
- ½ tsp vanilla
- ¼ tsp lemon zest
- 8oz mascarpone cheese
Mix brownies as directed adding ¼ cup of coffee to the batter. Brownies should cook at the normal temperature and time but be sure to check. You may need a few extra minutes depending on your oven due to the extra moisture.
For this recipe I chose to use homemade gluten free lady fingers as we recently celebrated a family birthday and the requested cake was tiramisu. Leftover lady fingers inspired this recipe. Lady fingers, especially gluten free ones, can be hard to find. You can easily order them from amazon or with a little time and effort make your own.
Mix the remaining ¼ cup coffee and ¼ brandy in a wide bowl and quickly dip each lady finger front and back. You want the lady fingers covered but not soaked. Place the ladyfingers over the brownies. I may have spooned some of the remaining coffee mixture over the exposed brownies for some added flavor 😊
For the topping combine cream, sugar, and vanilla then whip until you have firm peaks. Add lemon zest and mascarpone cheese mixing on low until incorporated. Spoon over brownies. Cover and let sit over night for best flavor. Just before serving dust brownies with some coco powder.
The rich brownie flavor and silky texture of the whipped topping make for a delicious treat.
