Einkorn Apple Fritters: Quick and Delicious!

Einkorn Apple Fritter

A classic donut is something that will always make me happy. I’ve mentioned this before…a few times, I believe… I’ve always had a thing for that super crunchy pop of apple fritters, though. Not an “eat them as my donut choice always”, but occasionally. Somehow they always stay crunchier than a regular donut, and I love that! The nice thing about apple fritters as well is that they don’t really require any rising time. Of course they don’t really have the taste of a risen donut, but sometimes that’s ok.

Yeast raised donuts are my preference, but oftentimes the wait time is not in the cards, and neither is waiting on chilling the dough for a classic sour cream donut. If you want a delicious, relatively quick donut experience, with a pop of extra flavor give these einkorn apple fritters a try!

Ingredients:

Original Recipe from Dinner then Dessert

Einkorn Apple Fritters:

1 1/2 cups einkorn flour

1 T Sugar

2 t baking powder

1/2 teaspoon salt

2/3 cup milk (non-dairy works totally fine here)

2 larges eggs, beaten

1 T oil

3 cups apples (The stronger the flavor the better)

1 teaspoon cinnamon

Glaze:

2 Cups Powdered Sugar

1/4 Cup Milk

1 t vanilla

  1. In a wide shallow pot (like a dutch oven) heat 2-4 inches of oil to 350 degrees. Use either an instant read or candy thermometer to keep an eye on things.
  2. Cut your apples into small chucks, 1/4- 1/2 inch size pieces.
  3. Whisk the flour, sugar, baking powder and salt together in a medium bowl.
  4. Whisk the milk, oil, and eggs together and add to dry ingredients and mix until smooth. Add Apples and combine, then swirl in the cinnamon.
  5. Use a quarter cup measure to GENTLY scoop batter into the hot oil. Cook on each side for 3-4 minutes. Check oil temp after each batch.
  6. Let cool on a wire rack.
  7. Whisk together all glaze ingredients in a bowl. Dip Donuts in glaze once cool and let dry.
  8. Enjoy!
