Crockpot Spiced Apples

Mornings are busy enough without trying to make elaborate breakfasts, right? Here’s a recipe that we love in the fall and winter for overnight crockpot spiced apples. You can make it the night before and wake up to a beautiful steamy delicious breakfast that everyone will love! Throw a hard boiled egg on the side, or make a quick fried egg for some protein, and you and the kids will have a nutritious and delicious meal together.

Crockpot Spiced Apples:

1 medium apple per person (sweet tart varieties like honeycrisp or gala are best)

1/4 tsp of your fall spice mix (or cinnamon or apple pie seasoning)

1/4 cup raisins and/or walnuts per apple

1 Tblsp butter per apple (optional – can use a splash of water or apple juice if preferred)

Process:

This is the quickest breakfast you’ll ever make! Core the apples, set them in the crockpot, fill the holes with raisins and/or nuts, sprinkle the seasoning on top, and place the pat of butter on the top of the hole of each apple. If you prefer to avoid butter, you can use a vegan butter, or you can just add 1/4 cup of water or apple juice to the crock pot to replace the missing moisture from the butter. Turn the crockpot on low just before going to bed, and you will wake up to a soft, steamy, spicy breakfast just waiting to be spooned into bowls and served with a splash of cream or coconut milk!
